Riddling/remuage
We can offer either the traditional pupitres or the modern giropallet.
The purpose of riddling (remuage) is to shake the yeast sediment formed
during the secondary fermentation into the neck of the inverted bottle,
prior to removal of the sediment plug.
Pupitres
Each pupitre holds 120 bottles. The riddling process takes from about
2 - 4 weeks.
Giropallet
Giropallet offer completely automated, mechanised riddling. These range
in capacity from a 183 bottle single cage machine to a double cage model
with a capacity of 1000 bottles. The automatic cycle takes typically
one week. Please ask for details.
