Inverted, crown capped bottles are placed manually in the pupitre for the process of riddling (remuage), which involves manually and fractionally rotating each bottle at regular intervals, so that the deposit of yeast (lees) settle inside the caps via gravity. The riddling process can take anything from about 4 - 6 weeks. On completion the the bottles are ready for disgorgement.
